As the temperature outside rises, desserts made with cool ingredients are the best way to create a finale. Try a raspberry lemon Tiramisu or a mango orange mousse.

Having a dinner party but hoping to stay out of the hot kitchen? Try these no-bake desserts to finish the meal. Whether the party is indoors or outdoors, a cool dessert on the menu leaves the guests feeling refreshed.

The following two no-bake desserts are fruity, fresh and cooling. After a hot meal, these desserts will satisfy the desire for the sweet taste of summer's bounty.

Tiramisu Recipe

Raspberry-Lemon Tiramisu

Ingredients:

  • 1/4 cup sugar
  • 16 oz fat-free cream cheese, softened
  • 1 tsp vanilla extract
  • 1 pkg (0.3 oz) sugar-free lemon gelatin
  • 2 cups fat-free nondairy whipped topping, thawed
  • 1/2 cup all-fruit red raspberry preserves
  • 2 Tblsp Marsala wine
  • 2 pkgs ( 3 oz each) ladyfingers
  • 1 pint fresh raspberries (or frozen and thawed out)

Directions:

  1. Combine cream cheese, sugar (or sugar substitute) and vanilla extract in large bowl. Beat at high speed in mixer until smooth. Set aside.
  2. Combine 1/2 cup water and gelatin in small microwavable bowl; microwave on high for 30 seconds to 1 minute or until water boils and gelatin dissolves. Let cool slightly.
  3. Add gelatin mixture to cheese mixture; beat for 1 minute. Add whipped topping; beat 1 minute again. Set aside.
  4. Whisk preserves, 1/4 cup water, Marsala wine together in small bowl until blended. Reserve 2 Tblsp of preserves mixture; set aside. Spread 1/3 cup preserves mixture evenly over bottom of glass baking dish (11 x 7 inch).
  5. Split ladyfingers (or other vanilla spongecake cookie) in half. Place half in bottom of baking dish. Spread 1/2 of the cheese mixture over the ladyfinger. Sprinkle 1 cup of raspberries evenly over the cheese mixture. Layer with the remaining ladyfingers, then the remaining preserves mixture. Top with remaining cheese mixture. Cover and refrigerate for 1-2 hours. Sprinkle with remaining raspberries and final drizzle with the reserved 2 Tblsp preserves mixture. Makes 12 servings.

No-Bake Dessert

Mango-Orange Mousse

Ingredients:

  • Fresh mango (enough to make 1 cup puree in blender or processor)
  • 1 envelope (1 Tblsp) unflavored gelatin
  • 1/4 cup cold water
  • 3 eggs (separated) at room temperature
  • 3/4 cup fresh orange juice
  • 1/2 cup sugar, divided
  • 1 Tblsp lemon juice
  • 1 dash of salt
  • 2 Tblsp Captain Morgan's Spiced Rum
  • 1 cup heavy cream, divided
  • shredded orange peel for garnish
  • mint sprig for garnish

Directions:

  1. Process enough mangoes in processor to make 1 full cup of puree. Leave aside several slices of mango for top of dessert, cover and refrigerate.
  2. Sprinkle gelatin over cold water in bowl, let stand a minute to soften.
  3. Beat egg yolks in pan, whisking in orange juice, 1/4 cup sugar, lemon juice and salt. Cook over med-low heat until mixture has thickened enough to lightly coat metal spoon. Remove from heat.
  4. Add softened gelatin and stir until dissolved. Stir in mango puree and rum. Refrigerate for 20 mins.
  5. Beat egg whites on high until frothy. Gradually add remaining 1/4 cup sugar, 1 tablespoon at a time, beating well after each addition. Beat until stiff peaks form. Fold into mango mixture.
  6. Whip 1/2 cup cream until soft peaks from. Fold into mango mixture. Spoon into glass serving bowl. Refrigerate until firm, 3 to 4 hours minimum. Just before serving, whip remaining 1/2 cup cream until soft peaks form. Garnish mousse with reserved mango slices, whipped cream, orange peel and fresh mint. Makes 8 servings.

The Raspberry-Lemon Tiramisu recipe is awesome! Doubled the recipe and made it in a springform pan - Impressive-looking, yet easy and delicious!
