Easter treats are fun to make and serve; fun-loving, kid-friendly, there's something for everyone to love about edible bird nests and baby bunny-shaped cookies or baby chicks. Bird cupcakes are not only easy to make, but fun to decorate as the details will bring the animals to life.
The celebration of Easter is one of joy and hope based on the risen Christ. Families who focus on the Christian holiday of Easter can enjoy traditional feasts with desserts that have a touch of whimsy. Spring is the catalyst for food that turns out baby bunnies, baby chicks and bird nests.
Make Bird Nests Out of Shredded Wheat
Ingredients:
- 2 large shredded wheat biscuits
- 1/4 cup shredded coconut
- 1 Tbsp brown sugar
- 1/4 cup butter, melted
Directions:
- Break up shredded wheat biscuits, crumbling into small pieces in medium bowl.
- Stir in coconut and sugar, mixing well.
- Drizzle melted butter over all and toss well to coat.
- Line six muffin cups with foil and press mixture into the bottoms and up the sides of the cups.
- Bake in a 350° oven for ten minutes till crisp. Cool in cups. Remove by lifting foil up and peel baskets away from the foil. Baskets can be filled with candy, small chocolate eggs, bunny or chick cookies or fruit and yogurt. Makes six servings.
Gingerbread Bunny Cookies
Ingredients:
- 1 stick butter plus 2 Tbsp, softened
- 1/2 cup molasses
- 12 cup brown sugar
- 1 egg yolk
- 1 Tbsp ground ginger
- 2-1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp pumpkin pie spice
- dash of salt
- cookie cutters in shapes of bunnies and/or chicks
Directions:
- Cream butter and sugar together in bowl. Beat in molasses and egg yolk. Sift in the dry ingredients to make a dough. Divide dough in half and mold into two balls. Wrap balls in plastic and chill in refrigerator for 30 minutes.
- Preheat oven to 400°. Roll out the dough on lightly floured surface to about 1/4-inch thick.
- Using cookie cutters, cut out bunnies and chicks. Place on cookie sheets lined with baking parchment paper. Bake for 10-12 minutes. Allow to cool a bit and then place on wire racks.
- Once the cookies are completely cooled, decorate with icing and raisins, mini chocolate m&ms, and any other decorative candies.
Baby Chick Cupcakes
Directions:
- To turn cupcakes into little chicks, bake two different sizes of cupcakes (from a box) using a regular-sized muffin tin and a mini muffin tin. Use pink, yellow and green cupcake liners.
- Bake the minis for around 15 minutes and the regular muffin-sized cupcakes for 20 minutes. Remove from pans and let cool completely before stacking the smaller cupcakes onto the larger cupcakes by spreading icing onto the base before adding the mini cupcake.
To decorate the chicks, ice the cupcakes with yellow icing. Drop coconut onto each chick. Cut out triangular beaks, combs and feathers from flat fruit roll-ups. Eyes can be made from small m&ms or drops of dark chocolate icing. This project is one that elementary-aged children can easily make with the help of an adult.
